SWISS PIE
Preheat the oven to 425F. In a mixing bowl beat together the eggs, sugar, lemon zest and juice with an electric mixer. Sift in the flour and baking powder and mix. Then add the melted butter. Roll out the pastry and line a 9-inch porcelain or ceramic pie dish. Peel and cut the apples into quarters and place them in the pie crust. Bake for 20 minutes, then reduce heat to 300F and bake for 20 minutes longer. Remove the pie from the oven and sprinkle with the sugar. Serve warm or cold.
